Spinach and Ricotta Stuffed Shells


If you really knew me you would know that my favorite thing to cook is pasta dishes. I could live off of pasta and be content with the choice. Now if you add cheese to a pasta dish I am even MORE content. So saying that, here is a great recipe for stuffed shells. Enjoy!

What you will need!

  • 1 box of pasta shells
  • 1-1/2 tbsp olive oil
  • 2 tsp fresh garlic, minced
  • 4 cups of fresh spinach (chopped)
  • 12 oz of ricotta cheese
  • 1 cup of mozzarella cheese
  • 1/2 cup of Parmesan cheese
  • 1 egg
  • 1 tsp of salt
  • 1/2 tsp of  pepper
  • 1-1/4 cups of marinara sauce

Let’s get started!

Preheat the oven to 375 degrees.

Cook the pasta.

Heat the oil in a large skillet over medium-high heat. Add the garlic and cook for a minute. Add the spinach and cook for about 3 minutes. (Remove from heat)

In a bowl, stir together the spinach, ricotta cheese, mozzarella cheese, parmesan cheese, egg, salt, and pepper.

Pour some sauce onto the bottom of a baking dish. Now start to stuff each shell with a good amount of the ricotta mixture.

Once you place the shells into the dish, pour the remaining of the sauce over them. Cover and bake for 25 minutes. After the 25 minutes, uncover and continue to bake for another 10 minutes.

Add more parmesan cheese to the top before serving if you love cheese as much as me.
