Hello foodies! I decided to make dinner for my roommate and I but wanted something quick because she had to get to Relay for Life that night. I came across this amazing dish that I can’t wait to share with you. It was very simple and all you have to do is put it together then into the oven!
What you will need!
- 2 Chicken Breasts
- 1 tsp Garlic Powder
- Salt & Pepper (to taste)
- Parmesan Cheese
- 2 cups of mozzarella cheese
- 2 cups of chopped broccoli
- 2 cups of Alfredo sauce (I used jar to save time but I will share a great Alfredo recipe)
- Pasta (Any type)
If making own Alfredo sauce you will need…
- 1 Tbsp of olive oil
- 4 cloves of minced garlic
- 3 Tbsp of flour
- 1 cup of chicken broth
- 1 cup of low fat milk
- 3/4 cup of parmesan cheese
- 1/2 tsp of salt
- 1/4 tsp of pepper
To make the Alfredo sauce…
Heat the olive oil in a large sauce pan over medium-high heat. Add the garlic and stir for 1 minute. Sprinkle with flour and stir to combine.
Slowly add the chicken broth and whisk until smooth. Add the milk and bring the mixture to a simmer. Let cook until thickened then stir in the parmesan cheese, salt, and pepper. Remove from heat and set aside.

Lets’ Get Started!
Preheat the oven to 375 degrees.
Take a casserole dish (I used an 8×8 pan) and place the two chicken breasts in it. Sprinkle the garlic powder, some parmesan cheese, salt, and pepper on the chicken.
Take your cut up broccoli and spread it across the chicken breasts. Try to cover majority of the chicken with it.
Cover the broccoli and chicken with the Alfredo sauce and then spread mozzarella cheese on top. Sprinkle some parmesan cheese (to taste) on top of the mozzarella cheese.
Bake for 45 minutes or until the chicken is cooked. (It only took 45 minutes for my chicken)
While the chicken dish is baking, cook the type of pasta you chose.
When the pasta is done, scoop it onto a plate. When the chicken is done, place it over the pasta.
